What you need:
*2 cups cooked or canned chickpeas, rinsed and drained
*4 marinated artichoke hearts
*4 large semi-dried tomatoes, cut in half
*8 oz. very ripe cherry tomatoes, cut in half
*8 scallions, sliced diagonally
*handful fresh basil leaves, torn
*small bunch fresh chives, snipped
*parsley leaves, chopped
*2 oz. fresh Parmesan cheese, shaved
*1 tbsp. black pepper
Easy to make Dijon dressing:
*1/3 cup extra virgin olive oil
*1 tbsp. freshly squeezed lemon juice
*1 tsp. Dijon mustard
*1 small garlic clove, crushed
*sea salt and freshly ground black pepper
Combine dressing ingredients in a bowl and beat with a fork. Add the chickpeas, artichoke hearts, and semi-dried tomatoes, and toss in the dressing.
Cover and chill for up to 4 hours.
When ready to serve, add the cherry tomatoes, scallions, basil, chives, and parsley. Stir gently, sprinkle with the shaved Parmesan and pepper, and serve.
