Makes: 2-4 servings - 20 minutes
What to do:
Mix together marinade ingredients.
Marinate salmon, mushrooms, eggplant, and pepper in large bowl for 1 hour or more.
Barbecue, broil, or grill. Start the salmon skin side facing the heat source. Turn once. Total cooking time will be approximately 8-10 minutes per inch of thickness.
The veggies will cook faster, so keep an eye on them.
